Like you, I am a farmer. I understand the time, effort, blood, sweat, tears and finances we put into raising our own livestock. The dedication and long hours that are required to proudly raise an animal for our families. The sense of accomplishment as we provide for our family the purity and quality of the livestock we choose to serve our family.
At 8 years old my dad woke me up on a Saturday morning and said, "Son, your coming to work with me today". An hour later I was standing on a milk crate in a cold cutting room pulling the innards out of chickens, and grinding ground beef. At 13, cutting primals. At 17, breaking cattle. For the next 30 some odd years I owned a prime butcher shop, and now at nearly 60, I get to use a life time of experience to do what I do best. Provide the finest quality processing for your livestock.
As a butchering service I work on your animal and ONLY your animal until completion. I do not resell any of your animal. I am your personal butcher until delivery of your animal. I am in constant contact with you through out the process with pictures, texts, e mails and phone calls. Your animal processed your way to your specification. I maximize every portion of the animal to its best usage and yield. You receive back 100% of your animal and I consistently yield a higher percentage of finished product than most or all processors as I take the time to focus on your animal only.
I started Johns Butchering Service with one goal in mind. To provide the highest quality processing of your animal and to ensure you receive back your animal in entirety. Unlike custom exempt processors, I process only your animal until completion. From The moment I pick up your animal until you receive it back to you, it is the only animal in my processing house. I personally butcher your animal from start to finish with the assistance of my apprentice. With over 50 years experience I maximize all of your cuts to give you the greatest variety of meat that any animal has. No hack and pack. Each section is meticulously processed to reduce waste, maximize yield and increase the overall quality of each cut.
To start the process, if you choose, we will pick up your animal at your farm and bring it to our farm where it is kept in a secure holding stall for 24-48 hours to where it can relax, calm down and get comfortable with it's new environment. Upon dispatch of your animal you will receive a photo of the scale with the animal on it. This is the actual processing weight used to price your animal. We then skin, remove the internal organs and head of the animal where you will then receive another picture of the weight of the animal. At that point the animal is then processed into primals where it is refrigerated and brought down in temperature.
From here it is normally an eight day turn around process on cattle where we systematically process your animal to reduce unnecessary shink while providing the aging for your loin and rib cuts. Our cooler is kept at an average of 34 degrees and we strive for a 65-70% humidity to get quality drying and aging. So many places never talk about humidity, and yet it is the key to quality aging.
We package all of your meat into a heavy poly bag and then double heat sealed. Ground beef is never bulk packaged. Burgers are hand pressed and all sausages are hand made using the finest ingredients. In addition, we clearly label and date all of your packages. All cuts are done with your family needs in mind. We will butcher and package all of your items* to match your family meal consumption. Upon completion of your animal you receive a full inventory list, total net weight of items and we also do a retail cost analysis so you know what the items you have would have cost you if you bought it all retail. You receive all items back to you frozen and ready to go right into your freezer.
